Fresh Veggies and Pasta Salad with #LaRomanella (sponsored post)

Last weekend I felt like everywhere I turned, someone was posting, tweeting, or sharing about some down and dirty junk food for the big Super Bowl game. And by down and dirty, I really mean sinfully delicious.  I was totally leaning towards going out and grabbing us a pizza, or subs with chips and dip, but then I decided the heck with traditional junk food on game day. I was going to run out and grab a few things and make us a healthy, and totally satisfying dinner.



I bought a few of my favorite #LaRomanella products from Smart & Final, products that me and my family have enjoyed using. (A few months ago I even made an awesome Mediterranean Inspired Pizza with some of the La Romanella products.) I really like the organic pastas they have, their extra virgin olive oil, and our house pretty much always keeps grated parmesan cheese on hand.

I used plenty of fresh vegetables that we had at home… 1/2 of a red onion, 2 red bell peppers, 1 orange, yellow, and green bell pepper, and one zucchini.

I diced all of the vegetables up, and then cooked my bow tie pasta. I decided to leave my vegetables raw, similar to how a cold pasta salad is. 

Once my pasta was done cooking, I drained it and immediately added all of my veggies to the big pot of pasta.

I stirred everything together, and then added 3-4 tablespoons of extra virgin olive oil.

After I added the olive oil I added some parmesan cheese (about 1/2 a cup), and some dried herbs and seasonings (1 teaspoon of thyme, 1 teaspoon of oregano, 1 teaspoon of basil, 1 teaspoon of Italian Seasoning, and 2 teaspoons of garlic powder).

The heat from the cooked pasta warmed up the fresh vegetables, and allowed them to cook just a bit.
I really enjoyed the pasta salad warm, with the raw vegetables. I felt like it was so much better than grabbing a few slices of pizza, or a few handful of chips. Not that I don’t do that plenty of other times.  This pasta salad really just made me feel like I did good for the day. Ever eat meals, where you think that?

I love it when I find a great pasta salad recipe - not only are they perfect for summer when you don't want a hot dish, but they are great for anytime when you need a quick meal. Looks delicious!
