Stuffed Bell Peppers Recipe- enjoy this Foodalicious Friday post

So not only have I been hitting the gym, I’ve also been trying to eat better too. In no way do I eat healthy 100% of the time, but I have been trying to do better when I am making meals or eating out.  These stuffed peppers are healthy, easy to make, and you can make enough for your whole family, or enough to have left overs for your next meal.

STUFFED PEPPERS RECIPE
7-8 bell peppers
1 cup of quinoa
1 onion (diced)
1 tablespoon of olive oil
2/3 cloves of garlic (minced)
1 lb of ground turkey
1 zucchini (diced)
3 tomatoes (diced)
1  8 oz package of cream cheese (cut into cubed pieces)
3-4 tablespoons of Italian Seasoning Mix
salt & pepper to taste
shredded cheese

Preheat your oven to 375 degrees (F).

Cut one side off of each bell pepper and then remove the seeds.  Take the sides that you cut off and dice them then set them aside.

Take your one cup of quinoa, and rinse it using a wire mesh strainer. Once your quinoa is rinsed add it to your pan with 1.5 cups of water. Bring it to a boil, then drop it down to a simmer for 15 minutes. Remove it from the heat after 15 minutes and let it cool for about 5 minutes in the pan.

While your quinoa is cooking, sauté your onion in the olive oil for 3-4 minutes on medium high heat. Add the ground turkey and the diced bell peppers that you set aside earlier, to the same pan.  Once the ground turkey is browned, add your diced zucchini and your tomatoes and cook for 3-4 minutes. Add your cooked quinoa to the mixture, and then the cream cheese. Stir well until all of the cream cheese is mixed in. Add in your Italian Seasoning and the salt and pepper, and mix it in well. Turn the heat off. 

Spoon the cooked mixture into each bell pepper, making sure you fill the whole pepper.  Place your stuffed peppers into a baking pan, side by side. Top them with shredded cheese.

Bake your peppers in the oven for 25-30 minutes.

Remove them from the oven and allow them to cool for a few minutes before serving.

Don’t those look delicious? Maybe they’ll find their way to your table this weekend. You could serve them up with a salad and a piece of garlic bread and you’re all set.  Or skip the bread and go for more salad, right? ;)
